Recipes


Easy Christmas Coconut Cookies

1 stick butter
1 1/2 cups brown sugar
2 eggs
2 teaspoons vanilla
1 cup flour
2 teaspoons baking powder
1 teaspoon salt
1 1/2 cup coconut, shredded
1 cup pecans, chopped

Melt butter over low heat. Stir in brown sugar until dissolved. Let cool then add eggs and vanilla. In a separate bowl mix dry ingredients together. Then add dry ingredients and stir. Add coconut and pecans. Drop onto cookie sheet and bake at 350F degrees for 6 to 8 minutes.

Chocolate Truffles

1 can sweetened condensed milk
3/4 cup butter (4 1/2 tablespoons)
3/4 cup cocoa powder (unsweetened)
1 tablespoon vanilla extract


On stove, melt butter on low heat. Add cocoa and stir. Let cool then add milk and vanilla. Chill for 3 to 4 hours. Roll the chocolate goop into little balls. Next roll balls into powdered sugar before putting them on a plate. Keep chilled until serving.
